Choline and inositol are essential building blocks for phosphatidylcholine and phosphatidylinositol, which in turn are essential for the synthesis of lipoproteins, which transport fat and cholesterol in the blood. Their deficiency therefore affects the presence of these "carriers" (LDL) and VLDL, which will promote the accumulation of fat in the liver.
